450 g lean ground pork
1 onion chopped
3 garlic cloves minced
1/3 cup hoisin sauce
2 tbsp chopped ginger root
2 tbsp soy sauce
4 cups chicken stock
1 carrot shredded
1/2 cup sliced mushrooms
142 g vermicelli noodles
1 green onion
1/2 cup bean sprouts
4 coriander sprigs

Directions:

1. In saucepan brown pork over medium heat stirring to break up meat.
2. Drain off fat.
3. Add onion, garlic, hoisin sauce, ginger and soy sauce. Cook for 2 min.
4. Add chicken stock and bring to boil. Add carrot and mushrooms reduce heat and simmer for 10 min.
5. Stir in noodles simmer for 5 min
6. Serve with green onions, bean sprouts and coriander sprigs
