3 cups flour
1 1/2 tsp salt
1 egg
3/4 cup water
4 tsp oil

Filling:
1 Tbsp butter
1/3 cup finely chopped onion
1 cup cold mashed taters
3/4 cup shredded cheddar cheese
1/2 tsp salt
1/4 tsp pepper

Directions:
Directions:
1. Make dough - mix egg, water and oil. Mix flour and salt together then add to the egg mixture. Knead into a dough. Roll out onto a floured surface to 1/4 inch thick. Cut out circle shapes from rolled out dough.

2. Mix all filling ingredients together. Fill 1/2 of circle cut out and fold other half over pinching edges to make a 1/2 moon shape.

3. In a large pot, boil salted water. add 5 - 6 perogies at a time to the boiling water. When perogies float, they are finished. Take them out one by one with a slotted spoon replacing with more perogies that need to be cooked.

You can pan fry them after boiling them in bacon bits and then serve them with cottage cheese. mmmmm.
