1 stick butter (1/2 cup or 4 oz vegan butter or margarine)
8 oz sour cream (vegan or non dairy substitute works great too)
1 can creamed corn
2 ears of fresh corn (or a can of sweet corn)
1 cornbread mix any brand will do (or 9oz of gluten-free cornbread mix)

Spray your casserole dish, 8x8 brownie pan or pie pan with PAM. Melt your butter or butter substitute in a pan or in the microwave, let it cool while you dump everything else in a mixing bowl. I just folded them together with a big wooden spoon but you can use a mixer. Add the melted butter and mix again. Your batter will be lumpy so do not over mix. Spread it all out in a casserole dish and baked at 350F for an hour.

Great with soup, salad, chili, ham or any southwestern dinner you can dream up. It makes the house smell like freshly baked bread!
You can add an egg also if the cornbread mix calls for one.
