1 medium bunch broccoli (about 1 lb) divided into florets and stalks, woody stems removed
2 Tbsp plus 2 tsp margarine
1 medium onion thinly sliced and separated into rings
1 1/2 cups thinly sliced celery
3 cloves garlic, minced
1 1/2 tsp fresh lemon juice
2 tsp grated lemon zest
1/2 tsp salt
1/4 tsp freshly ground black pepper

1. In a vegetable steamer, steam the broccoli until just tender when tested with a knife, 3 to 5 minutes.

2. in a large nonstick skillet over medium-high heat, warm the margarine until melted. Add the onion, celery and garlic, and cook until the onion begins to brown, 3 to 5 minutes. Remove the skillet from the heat.

3. Add the broccoli, lemon juice, lemon zest, salt and pepper to the skillet, and stir to combine. Serve warm or at room temperature.

Makes 8 servings
