36 medium shrimp (about 1 lb)
1 Tbsp olive oil
2 cups red bell pepper strips
1 cup green bell pepper strips
1/4 cup chopped parsley
1 Tbsp chopped scallion
2 cloves garlic, minced
2 Tbsp fresh lemon juice
2 Tbsp balsamic vinegar
1/4 c fresh basil leaves finely chopped (or 2 tsp dried)
Lemon slices and parsley sprigs for garnish (optional)

1. Shell and devein the shrimp leaving the tails attached.

2. In a large nonstick skillet over medium-high heat, warm the olive oil. Add the red and green bell peppers, 2 Tbsp of the parsley, the scallion, and garlic, and saute until the vegetables are tender, 4 to 5 minutes.

3. Add the shrimp, lemon juice, vinegar and basil, and stir-fry until the shrimp turn pink and opaque, 5 to 6 minutes. Sprinkle with the remaining 2 Tbsp parsley.

4. Divide the shrimp and bell peppers evenly among 6 dinner plates. Garnish with lemon slices and parsley sprigs if desired.

Preparation time: 45 minutes
