4 eggs, separated
2 lb. ricotta cheese
3/4 cup sugar
1/3 cup flour
1 tsp. vanilla extract
1/4 tsp. almond extract
dash of salt
1/2 tsp. orange rind
1/2 tsp. lemon rind
9 inch spring form pan buttered and floured

Directions:
Directions:
1) Preheat the oven to 375º Fahrenheit
2) In the mix-master, beat together egg yolks, sugar, ricotta and flour. Beat well.
3) Add vanilla extract, almond extract, orange rind, lemon rind, and salt.
4) In a separate bowl, beat egg whites into a stiff peak. Fold into ricotta mixture.
5) Transfer mixture into the spring form.
6) Bake 50 minutes. Once done, turn off the oven and leave the cheesecake in the oven with the door open another 15 minutes.
7) Cool cake. Best served chilled.
