4 cups cut-up rhubarb (fresh or frozen)*
1 cup sugar
1/4 cup flour
1/2 tsp cinnamon
1/2 cup water
Topping:
1 cup flour
1/2 cup quick-cooking rolled oats
1 cup packed brown sugar
1/2 cup butter, melted (one stick)
*you can use more rhubarb but just adjust the sugar, flour and water. The topping can remain the same.

Pre-heat oven to 375º. Lightly butter a baking dish. Combine rhubarb, sugar, 1/4 cup flour and cinnamon and put in prepared baking dish. Pour water over all.
Combine 1 cup flour, rolled oats, brown sugar, and melted butter, mixing with a fork to make a crumbly mixture. Sprinkle over rhubarb.
Bake about 35 min. or until rhubarb is tender. Serve warm alone or with ice cream. Enjoy leftovers for breakfast.

There are 2 other crisps listed in this cookbook already but I love rhubarb (I have left rhubarb patches at every house I've lived in!) and had to add another. You can use any of the crisp toppings. This one has quite a lot of butter which you can probably reduce by at least 1/3, Rhubarb is very sour so it requires more sugar. You can add rhubarb or other sour fruit such as cranberries to any fruit crisp. Just increase the sugar a little (about 1/4 cup per cup of rhubarb) if the original fruit combination did not include one of these sour fruits. Apple-rhubarb is delicious!
