2 1-lb packages boneless chicken breasts
4 cups chicken broth or veggie broth
4 cloves garlic or more (to taste)
1 whole lemon
2 Tbsp dried parsley, or 1/2 cup fresh
salt and pepper to taste
2 cups rice

Directions:

Spray the slow cooker with PAM. Place chicken in the bottom of the slow cooker. Season with salt and pepper to taste. Add broth, garlic and parsley. Cut lemon in half, squeeze juice onto chicken, then drop the rest of the lemon into the broth. Cook on low for 4 - 6 hours (adjust as necessary based on the amount of chicken you have). Add rice during the last 60 minutes if you are using brown rice, or during the last 30 minutes if you are using white. Discard lemon peels before serving.
