1c. Oil
1 1/2 c. Sugar
Pinch of salt
3tsp anise extract
4tsp baking powder
1/2tsp baking soda
6eggs
5 1/2 c. Flour

Directions:
Directions:
Beat eggs and then add oil, sugar, and extract.
Beat on medium speed until blended
In a separate bowl whisk together flour, salt,baking powder and baking soda
Add flour mixture to the egg mixture and mix with a wooden spoon
This can more easily be done with a dough hook mixer blade.
Divide the dough in half and shape into logs.
Bake on parchment lined cookie sheet for 20 minutes at 375º
Let cool and then slice and place back in the oven to toast.
Optional additions to the basis dough: chopped nuts, mini chocolate chips or drained and chopped maraschino cherries
This biscotti can also be frosted as the anginetti cookies or just dusted with confectionary sugar
