4 tab. apricot preserves
5 cups(6 or 7)firm ripe Bartlett pears (peeled and sliced)
1/3 cup sugar
1/3 cup brown sugar
1/4 tea nutmeg
1/4 tea cardamom
21/2 to 3 tab quick cook tapioca
3 tab butter
Unbaked pastry for 2 crust pie

Directions:
Directions:
Preheat oven to350 degrees. Place one pastry in pie dish and let drape over sides. Mix together all pie ingredients ( for juicer pie use less tapioca.)Pour pie mixture into unbaked pie crust. Dot with butter. Cover with remaining crust. Trim and press together.and make slits in top to vent. Check of doneness by piercing fruit with a fork after baking 40 to 50 minutes.
