Chicken:
4 chicken parts (drumsticks, thighs, halved breasts)
1/4 c all-purpose flour
1/2 tsp salt
3 tbsp vegetable oil

County Gravy:
5 tsp fat (chicken drippings)
3 tbsp all-purpose flour
1/4 tsp salt
1 c hot chicken broth or water

Directions:
Directions:
Wash and dry chicken parts. Roll in mixture of flour and salt. Place on greased baking pan; pour oil or melted shortening over chicken and bake in 400ºF oven 55 minutes or until golden brown. Make County Gravy. Heat fat in saucepan; blend in flour and salt. Cook and stir constantly until light brown. Gradually stir in broth; cook until thickened. Continue cooking a few minutes, stirring occasionally and adding additional chicken broth if a thinner consistency is desired. Serve over oven-fried chicken.
