Firecracker Corn Dip Recipe

4 cans (16 oz whole kernel corn) if in season can use right off the cob
1 8 oz. block of cream cheese
1/ 4 cup or more to taste of jalapeno peppers. Keep a small portion of seeds to increase "heat"
1/2 of a medium sized onion
1/2 cup of shredded Parmesan cheese
3 T. butter
Tortilla chips for dipping


Directions:
Directions:
Dice the onion, jalapeno and sauté in 3 T butter in a fry pan until soft. Then add the corn and continue to sauté, mixing the corn, jalapeno and onion together.

Transfer the ingredients to a bowl, and add the cream cheese, mix well.

Transfer to baking dish , place under the broiler for 5 minutes, (watch so it doesn't burn) you want the “cheese crust” to bubble and slightly brown. It might be longer than 5 minutes. Take out of oven and make a knife slice to get the party started.

Serve with tortilla chips.
