1/2 block of paneer or more (this is Indian Cheese -available at Indian stores)
1Tbsp vegetable oil
1 cup thinly sliced onion
1tsp minced garlic
1 tsp minced ginger
1 cup chopped tomatoes (fresh or canned, drained)
1/2 tsp minced green chill
1 tsp salt
Spice Mixture:
2 tsp ground coriander
2 tsp ground cumin
1/4 tsp ground red pepper (cayenne)
1/4 tsp black pepper
1/4 tsp tumeric
1/4 cup water

1 cup water
about 500 - 600 g. or 20 oz frozen peas
1/4 tsp garam masala (a spice mix available in most grocery stores) OR make your own and store it: 1 tsp ground cinnamon, 1 tsp ground cloves, 1 tsp ground cardamom and 1 tsp black pepper.

In a large skillet over medium-high heat, fry the onion in oil until the edges are nicely browned. Add garlic and ginger and stir for another minute. Add tomatoes, green chill and salt and fry until tomatoes begin to break up.
Add spice mixture and fry for 1 minute. Add 1/4 cup water and continue frying until all tomato pieces have softened and broken up.
Cut the paneer into cubes (about 1 inch). Add 1 cup of water and the paneer* and simmer until the sauce becomes thick. Add peas and simmer until they are cooked and sauce is thick, about 5 minutes. Stir in garam masala and remove from heat. Taste for salt.
*This dish is supposed to be made with fried paneer. I have never done this and no one seems to miss it. Much healthier and cuts down the prep time.

This North Indian dish is a favourite dish in our house. Probably everybody can find an Indian store that carries paneer - buy a couple of blocks and keep them in your freezer for when a craving hits. Also, MEC (Mountain Equipment Co-op) and some grocery stores carry ready-made Peas Paneer in pouches. It actually tastes pretty good when you're out camping although I would recommend the homemade kind if you can get the paneer. You can make the paneer but like pastry, I'm just never going to do it.
