1 16-oz. container lite Cool Whip - thawed
1 5-oz. package. instant fat-free vanilla pudding mix
1 15-oz. can solid pack pumpkin
1 tsp. pumpkin pie spice


Thinly sliced Granny Smith apples, graham crackers and thin Ginger cookies.

Directions:

Combine first three ingredients in a large bowl. Mix until well blended. Fold in thawed Cool Whip and stir until well blended. Chill until ready to serve.

This is from AllRecipes.com. I brought it to a ladies' Christmas party last night and I can't tell you about all the raves it brought. It is INDEED yummy. And...you don't feel really bad about eating the entire bowl because it IS low fat.
