3 cups sugar
4 1/2 cups water
2 lemons
4-6 ripe but firm pears
2 cups fresh cranberries
poached orange slice made from 1 orange
fresh mint for garnish

Directions:
In a large saute pan over medium heat, combine 2 cups of the sugar and 4 cups of the water. Bring to a boil, stirring to dissolve the sugar. Stir in the juice of 1 of the lemons. Keep warm.
In a large bowl put the juice of the remaining lemon. Peel, halve and core the pears. Immediately place each pear half in the bowl, turning it in the juice to coat. After coating, transfer them to the hot syrup along with any lemon juice left in the bowl. Bring to a simmer and cook gently, uncovered, turning each half a couple of times to poach evenly, until tender, 10-15 minutes. Let the pears cool in their poaching liquid.
In a separate saucepan combine the remaining 1 cup sugar and the remaining 1/2 cup water. Bring to a boil, stirring constantly Reduce the heat to low and add the cranberries. Simmer gently, stirring a couple times, until the cranberries are just tender and the syrup thickens, 3-5 minutes, do not overcook. Let cool.
To serve, use a slotted spoon to transfer the pears, core side up to a deep serving platter or dish. Add about one third of the syrup to the dish. Using the same spoon to drain off some of their syrup, Arrange cranberries over each pear half. Place orange slices over and in between the pears.. Garnish with the mint.
