Ingredients: 1 whole turkey (12 to 14 lbs.) thawed
TIP: For a juicy turkey soak bird over night OR all day in SEA SALT or KOSHER SALT water and lemon juice in refrigerator.
1-2 tbsp. Jamaican jerk seasoning 1 tbsp. Emmeril seasoning 1 tbsp. black pepper ( course or fine ) 1 tbsp. sea salt 1 tbsp. smoked paprika or regular paprika ( smoked paprika gives it a sweet smoky flavor ) 2 tsp. garlic powder 2 tsp. ground mustard 2 tbsp. Italian seasoning
1orange (cut in quarters) 2 rib celery (cut up) 1 onion (cut in quarters) 2 tbsp. olive oil

Directions:Drain water off turkey rinse and pat dry. Mix all dry ingredients in a small bowl using plastic gloves. Rub seasoning inside turkey. Stuff turkey with orange, onion and celery. Brush turkey with olive oil. Rub seasoning mix under skin of turkey, being careful not to break the skin. Spread remainder of the seasoning on the skin. Put turkey in the pan and cover with foil. Place in refrigerator to marinate for up to 2 days.
Preheat oven to 325 *F Place oven rack in lowest position and put roasting rack in pan. Add to 1 cup water to pan and cover turkey loosely with foil and place in oven. Roast for 1 hour then remove foil and roast for 2 1/2 hours more or until internal temperature reaches 175 *F in thigh. While turkey is roasting base with juice from the pan. This can be done occasionally. When done remove from oven and sit for 25 minutes then transfer to platter. Pan juice can be use to make gravy or serve as is. |

Notes: Recipe can be modified to your liking. You do not have to use all the ingredients but you must use jerk seasoning if you want this result, (REMEMBER jerk seasoning is spicy so modify to your liking), ground mustard, paprika and garlic. If the water was as salt as a brine use less salt to season or skip it. One famous Jamaican saying is "IF YOU CANT TAKE THE HEAT STAY OUT OF THE KITCHEN." This can mean a number of things but any way enjoy and watch how much jerk seasoning you use.
