6 c. cooked & mashed sweet potatoes (2 40-oz. cans)
1 1/2 c. buttter
2 t. vanilla
2/3 c. sugar
4 eggs, beaten
2/3 c. evaporated milk
Topping:
1/4 c. butter
1/4 c. flour
1 c. brown sugar, packed
1/2 c. chopped nuts
mini-marshmallows (optional)

Directions:
Directions:
Mix all ingredients (except topping) and put in large casserole dish. Mix topping ingredients of butter, flour, brown sugar and nuts and spread over top. Bake at 350º for 45 minutes. At the end of 30 minutes of baking, spread mini marshmallows enough to cover top if desired.
