1 lb. ground chicken
1 lb. green beans, cut into 1" pieces
1 bell pepper, medium dice
10 or 12 button mushrooms, sliced
2 Thai chili peppers, finely diced with the seeds in (or remove half of them for a less spicy dish)
A handful or Thai basil leaves, roughly chopped
Stir Fry Sauce- we use "Soy Vey: Veri Veri Teryiaki" Sauce, but any teriyaki sauce you like will do
Vegetable Oil

2 cups of rice

Directions:
Start the rice in either a rice cooker (which is what we use) or on the stove. When the rice has about 15 minutes left to cook, heat a large cast iron pan or wok over high heat with a small amount of vegetable oil in the bottom. Add the ground chicken, breaking it up with a wooden spoon, until is in small pieces and cooked through, about 8 minutes. Remove the chicken and put it in a bowl to the side for now. Add a couple tablespoons of vegetable oil to the pan (still on high heat) and add the green beans, stirring them for about 4 minutes, then add the bell and Thai chili peppers, then the mushrooms after another few minutes. Cook the vegetables until they are still slightly firm, a total of about 8 minutes. Turn the heat off and mix the chicken back in, adding the stir fry sauce and chopped Thai basil. Mix thoroughly and serve over rice.

This is a weekly weeknight staple in our house! The spicy Thai chilis and Thai basil are key, but you can add just about any vegetable you have on hand to the mix. I like using ground chicken instead of sliced because it mixes in with the rest of the ingredients and you get some in each bite.
