Combine 1 beaten egg, 1 1/2 cups soft bread crumbs (2 slices bread), 1/2 cup applesauce, 1/4 cup finely chopped celery, 2 Tbsp finely chopped onion, 1 tsp Dijon-style mustard (I used yellow a couple times but Dijon is better), 1/2 tsp salt and dash of pepper. Add 1 lb of extra lean ground beef (or chicken) and mix thoroughly. Shape mixture into a roundish loaf in an 8 x 8 x2 inch baking pan.
With a spoon, make a crater-like depression in top of the loaf. Combine 1/2 cup applesauce, 1 Tbsp brown sugar, 1 1/2 tsp vinegar and 1/2 tsp Dijon-style mustard; pour into depression. Bake at 350º for 1 hour. Check the centre to make sure it's cooked through or use a meat thermometer.

I first made this for myself and my roommates back in the early 80's when I had one cookbook and all of the ingredients for this recipe on hand. Applesauce and mustard sounded like a weird combination but it was amazing. I used to make it regularly through my undergrad years. From the Better Homes and Gardens New Cookbook (received from my mother Christmas, 1976).
