3 Tbsp. butter or margarine
4 Tbsp flour
1/4 tsp salt
1 cup milk
1 cup shredded cheddar cheese (or another kind that melts well).
dash of Tabasco or hot sauce, if desired

Directions:
Directions:
Melt butter in a heavy saucepan (to prevent burning) over low heat. Blend in flour, salt and dash of pepper. Add milk all at once. Cook quickly until mixture thickens and bubbles. Remove sauce from heat. Add cheese, and a dash of hot sauce, if desired, stirring until smooth. Before you add this cheese, this is called a white sauce.
