Ingredients: 1 head lettuce 1/2 c. radish slices 1/2 c. chopped green onion 1/3 c. olive or corn oil (or combination), canola another option. 2 tbsp. lemon juice 2 tsp. sugar 1/2 tsp. salt Few dashes pepper, we use coarse. 4 oz. Feta cheese 2/3 c. whole pitted ripe olives Oregano
Optional: 2 oz. flat anchovy fillets, drained

Directions: |
Directions:Mix oil, lemon juice, sugar and salt with pepper to taste.
Toss with greens.
Scatter and lightly tumble the radish, onion and olives on the top of the oil mixed salad.
Crumble cheese coarsely and sprinkle over entire top of the salad.
Sprinkle oregano over all. Done.
(If using anchovy: wrap each around an olive. Next crumble the cheese around the edge of the bowl and place the anchovy wraps inside this ring to add appearance). |

Notes: We sprinkle a lot more feta cheese and olives on top and then heavily sprinkle oregano over the entire salad. The amount of any ingredients should be suited to your preference.
