10# + Pork Butt (Picnic, Bone-in)
Dry rub
Yellow mustard
Beer

Directions:
Preheat smoker to 225º
Don't forget the water pan. I put a minimum of 2 beers plus some water for this application.
Give the pork a generous coating of regular yellow mustard for the "glue".
Liberally apply a dry rub of your choice, or use the one in this cookbook.

Place the pork on the smoker, fat side down.

Apply the apple wood chips after 45 minutes.

After 1.5 hours, apply more wood chips.

Smoke a total of 16 hours.

Remove from smoker and wrap in heavy duty aluminum foild, and then wrap with a beach blanket. Place in a cooler for at least 2 hours.

When you unwrap the pork, it is ready to pull and serve.
