Ingredients: olive oil butter 8 oz kale, washed, cut and drained. Remove all large stems 1 medium onion 1 clove garlic 2 cups chopped chicken 4 oz pork sausage 1 box Zatarain's Black Beans and Rice 1 bag "boil in the bag" white rice or 4 oz cooked white rice salt and black pepper

Directions:In a large skillet combine; diced onion, chicken, finely chopped garlic and olive oil. Microwave the sausage links to remove any grease, if you use uncased sausage crumble it up now and add, for cased sausage use a scissors to cut into small pieces. Concurrently in a three quart pot bring the Zatarain's to a boil according to package directions. When the onions have cooked to opaque add the Zatarain's to the skillet. Watch your kitchen timer. It takes about twenty five minutes for the rice. Bring the bag of white rice to a boil and cook for ten minutes. When there is five minutes left on the kitchen timer add the kale to the large skillet. Add the white rice cook the whole mess for the remaining five minutes. Remove from heat and cover. Your dish will be ready to eat in about five minutes or when the kale gets bright green. . |
