1 can evaporated milk
1 package lemon jello
1 c. boiling water
1/3 c. sugar
1/8 tsp salt
3 T. lemon juice and rind
1 9oz. Cool Whip
1 box vanilla wafer, crushed
few drops of yellow food coloring

Thoroughly chill milk (hint: chill beaters and bowl in freezer). Whip until thick.

Meanwhile, dissolve jello in boiling water. Add remaining ingredients except vanilla wafers. Chill until soft-set.
Crush vanilla wafers in food processor or blender.
Beat jello mixture into whipped milk. Add Cool Whip and a few drops of yellow food coloring, Beat until blended.

Spread half of the vanilla wafer crumbs in bottom of 13x9 pan. Add lemon mixture. Top with remaining vanilla wafer crumbs.
Chill thoroughly
