Broth:
Carcass
8 c. broth
Drippings
1-2 carrots
1-2 celery
1 onion quarter
Bay leaf
Parsley, thyme, sage whole
peppercorns 5-10
Bring to boil and then simmer 1-2 hours
Soup:
Strained broth
2-3 c. chopped turkey
3 chopped carrots
3 chopped celery
2 chopped leeks
1 chopped shallot
GOO
Steamed haricot verts
Spinach (cooked or raw)
Chopped herbs parsley, thyme, sage, rosemary
Poultry season 1-2 t.
Salt and Pepper to taste
Parm to finish
Cooked orzo to add

Directions:
Fix broth and strain. Save for later or use in soup

Soup: Saute chopped veggies in GOO, Add herbs, salt and pepper if needed and herbs.
Add green beans, then broth and turkey. Cook simmer 30-40 min. Salt and pepper to taste.
Add cook orzo to individual bowls and finish with Parm. Or can add orzo to last 8010 min cooking time (it holds up well).
