Frozen pie shells - or you can make your own
1.5 lbs. ground pork (or mix with half ground veal)
1 medium sized onion minced
1 clove garlic minced
1.5 tsp. salt
1/2 tsp. thyme
1/2 tsp.sage
1/2 tsp.dry mustard
1/8 tsp cloves
1/2 c. potato cooking water
1 large potato mashed

Prepare pastry. set aside
Mix all ingredients except potatoes in saucepan. Bring to boiling point and allow to cook uncovered for 30 minutes.
Add mashed potato.
Chill
Put into unbaked pie shell.
Cover with pastry and bake at 425 for 30 min.
You can freeze before baking and bake when needed.

MODIFICATIONS
During the Christmas Season, one can never have enough tortiere!. I like to make my pies in bulk 7-8 at a time. The easiest way is to buy your ground pork and ground veal at Costco in those large packages.

These measurements are based upon 11lbs or 5 kg. meat.
Following the same method, substitute with the following measurements:
8 onions
12 tsp. salt
4 tsp each of thyme, sage and dry mustard
1 tsp ground cloves
4 cups potato cooking water
8 large potatoes and 8 cloves of garlic
