One side of fresh Atlantic Salmon (or portion size of your choice)
Juices from fresh lime
Salt and pepper
Cajan spices (paprika, chili powder, cayenne)*
Liquid honey

*you can buy cajun spice mix ready-made.

The secret to success with this recipe is in the ’heavy handed’ seasoning.
Prepare BBQ or oven by making it very hot.
Make tinfoil flat bed (2 sheets) turning up edges.
Lay salmon skin side down on the tinfoil.
Saturate top of salmon with the juices from 1-2 limes. Add lots of salt and min. pepper.
Smother the salmon in liquid honey (be aggressive) The honey insulates the salmon
Generously sprinkle cajun seasonings on top of honey (season to taste)
Cook open faced in hot BBQ (cover closed) for 15-20 min. or in a hot oven.
