1 1/2 cups fresh or frozen corn, off the cob
2 red bell peppers, diced
1 jalapeño pepper, seeded and minced
1/2 red onion, diced
4 tablespoons olive oil
1 can of black beans, rinsed and drained
Juice of 2 limes
2 tablespoons fresh minced cilantro
1/4 teaspoon sea salt

Directions:
Directions:
Preheat oven to 375º.
Combine the corn, red pepper, jalapeño, red onion and 2 tablespoons of the olive oil in a large bowl; mix well. Spread the vegetables in a single layer on a baking sheet. Bake, stirring occasionally, until the vegetables start to brown, 10 -15 minutes. Remove the vegetables to a mixing bowl.
Stir remaining 2 tablespoons of oil, the black beans, lime juice, cilantro and salt into the vegetables. Mix well. Serve chilled or at room temperature.
