3 cups Flour
1/8 tsp. Salt
1 Egg
6 tbsp. Ice Water
¾ cup plus 2 tbsp. Cold, Unsalted Butter, cut into small pieces

Directions:
Directions:
Place flour and salt in a bowl. In another bowl, beat the egg and the ice water together; set aside.

Add the butter to the flour mixture and rub together with fingertips until pieces are the size of peas. Add in the egg mixture. Toss gently until the mixture just comes together. Do not overwork the dough.

Divide the dough in half and form two disks. Wrap each in plastic and chill in the refrigerator at least 1 hour.

Makes enough for a 9” double crust.

Note: Don’t overwork the dough once the egg has been added, or the crust won’t be flaky.
