¾ cup Sugar
1 ½ tsp. Baking Powder
½ tsp. Salt
¼ cup Oil
3 Egg Yolks, unbeaten
6 tbsp. Cold Water
1 tsp. Vanilla Extract
I tsp. Lemon Zest
4 Egg Whites
¼ tsp. Cream of Tartar

Directions:

Sift together flour, sugar, baking powder and salt; form a well and add oil, egg yolks, cold water, vanilla, and lemon zest; beat until smooth.

In a second bowl, mix egg whites and cream of tartar; beat into very stiff peaks, stiffer than for meringue.

Pour smooth batter gradually over beaten egg whites, gently folding in. DON’T STIR. Pour immediately into an ungreased 8” square pan.

Bake 30-35 minutes at 350˚F or until top springs back when lightly touched with fingertips. Remove from oven and immediately turn pan upside down, resting on the edges on two other pans, until cold. Loosen from sides with a spatula; turn pan over and hit edge sharply on table to loosen. Serve un-frosted, with whipped cream and berries, ice cream, or dessert sauce.
