3/4 cup white rice (cooked 20 minutes with a little more water)
2 lbs. raw lean ground beef
1/4 c. diced, minced onion
2 eggs
1/4 tsp. salt & pepper
1 med. green head of cabbage
16 oz. of diced tomatoes or tomato juice

Directions:

Mix together the cooked rice, raw ground beef, eggs, salt, pepper, and onion.

Boil the head of cabbage after slitting the core 4 ways to loosen. As it boils start taking off the softened outer leaves (approximately 10 minutes). Take 1 leaf out at a time and fill it with approximately 2 tablespoonfuls of rice-meat mixture. Fold the cabbage leave over horizontally and then bring in the sides of leaf to make a pocket. Arrange in a covered casserole dish or roasting pan. Pour diced tomatoes or tomato juice over the top with some of the cabbage water and bake at 350 degrees for 1 hour. Or cook on medium heat on the stove top at a soft boil for 2-2 1/2 hours.
