2 Cups flour
3/4 Cup sugar
2 tsp. baking powder
1 tsp. ground cinnamon
1/4 tsp. salt
1 Large egg, lightly beaten
1 Cup unsweetened applesauce
1/2 Cup (1 stick) butter, melted

Toppings:
You can use sprinkles, glaze, cherries, oats, honey, nuts, or raspberries

Preheat oven to 375º.

Grease muffin tins or use paper liners in a 12 muffin pan.

Combine flour, sugar, baking powder, cinnamon and salt in a medium bowl. Whisk to blend.

Add beaten egg, applesauce, and melted butter. Stir until just blended.

Spoon into muffin pan (liners).

Bake for about 18 to 20 minutes. Cool for 5 minutes before taking out of pan.

When we were really little, we used to print off recipes from our computer and beg my mother to let us make them. We made these when Mickey was 7 and Andy was 5 (and Andy was still eating muffins). These are great!
