2 boxes of frozen chopped spinach thawed
(squeeze all water out)
2 C seasoned stuffing
2 C shredded cheese Parmesan
6 eggs
1 ½ sticks butter melted

Directions:
Directions:
Mix together all ingredients and refrigerate until mixture "sets up" about 20 minutes.
Form mixture into 1 in balls and place on a cookie sheet.
If needed immediately bake at 350º for 8 to 10 minutes.

If not needed immediately, freeze balls on the cookie sheet, transfer to a zip bag and store in the freezer until needed.
When needed bake frozen balls for 18- 20 minutes at 350º.

I use a pair of dish washing gloves for the ‘balling’ process – others have said they use a melon baller.
