2 lb (1 kg) new potatoes, scrubbed (peel on)
1/2 cup (125 mL) no name Ready To Use Chicken Broth
1/4 cup (50 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
1/4 cup (50 mL) fresh lemon juice
1 tbsp (15 mL) medium ground PC Roast Chicken Seasoning Grinder
2 cloves garlic, finely chopped

Preheat oven to 425°F (220°C).
Cut potatoes into 1-inch (2.5 cm) chunks. Place in 13 X 9-inch (3 L) glass baking dish. Add chicken broth, olive oil, lemon juice, spice grinder and garlic; stir until spice grinder and garlic are evenly distributed. Cover dish tightly with foil.
Bake in centre of oven for 30 minutes. Uncover. Stir. Return to oven. Bake, uncovered, in centre of oven for 30 to 35 minutes or until potatoes are easily pierced with tip of sharp knife and are lightly golden.
