2 large Vidalia onions, peeled and coarsely chopped
3 tablespoons butter or margarine
3 tablespoons all-purpose flour
1 cup reduced-sodium chicken broth
1 cup milk
1 cup grated Swiss cheese, about 4 ounces
Salt and freshly ground black pepper
1 sleeve round buttery cracker crumbs
1/4 cup (1/2 stick) butter or margarine, melted

Directions:

Set oven to 350 degrees.

Place onions in a saucepan. Cover with water. Bring to a boil over medium-high heat. Reduce heat and simmer for 15 minutes. Drain.

While the onions simmer, melt the butter in a saucepan. Stir in flour and cook, stirring constantly, for 1 minute.

Whisk in the broth and milk, stirring constantly until thickened. Add the cooked and drained onions and cheese and season to taste with salt and pepper.

Spread the mixture in a casserole dish.

Combine the crackers with the melted butter and sprinkle over the top. Bake for 30 minutes, or until bubbly.

Makes 6 side-dish servings.
