1/2 tea each dried basil,fennel seed,dried oregano,and dried thyme
Extra virgin olive oil
3 medium onions (finely chopped )
salt and pepper
3 large cloves garlic (minced)
2 lb fresh tomatoes, peeled, seeded and chopped ( do not use romas) or 1 can(28 oz ) whole tomatoes with their liquid, crushed.
2 (14oz) cans chicken or vegetable broth and 2/3 cup water
1/4tea cinnamon or to taste
Salt and pepper to taste
4 ounces fresh goat cheese, crumbled

1 Combine dried herbs in a small cup. Crush lightly untilthey become fragrant. Set aside
2 Film th bottom of a 6 qt pot with olive oil. Heat over medium -high heat.Stir in onions, season with salt and pepper, and cook until onions are golden brown,5 to8 minutes, stirring often.Add reserved herbs and garlic. Continue cooking until their aromas open up, about 30 seconds
3 Blend in tomato paste until there are no lumps,then add vermouth and tomatoes. Boil for 2 minutes. Pour in broth, stir, adjust heat toa light bubble, and cover pot tightly. Cook 20 minutes.Then blend in cinnamon,taste and adjust seasoning if needed
4Ladle soup into bowls, and top with crumbles of goat cheese.
