1/4 cup (60 mL) butter
2 tbsp (30 mL) minced shallots
1 cloves garlic, minced
8 oz (250 g) mushrooms, sliced
1/2 tsp (2 mL) salt
Pinch white pepper
1/2 cup (125 mL) dry white wine
2 tbsp (30 mL) each finely chopped parsley, chervil, chives and tarragon

Directions:
Directions:
In saucepan or skillet over medium heat, melt half of the butter; add shallots and garlic and fry until softened, about 2 minutes. Add mushrooms, salt and pepper; increase heat to medium-high and saute until mushrooms are softened. Add wine; cook until reduced to about 1 tbsp/15 mL.

Remove from heat; stir in remaining butter, parsley, chervil, chives and tarragon until butter is melted.
