1 tbsp. Olive Oil
1 Large onion, chopped
3 Cloves garlic, finely chopped
1 28 oz tin plum tomatoes with juices
2 tbsp. Chopped pickled hot peppers
1 Sweet red pepper, cut in 1 inch pieces
1/4 tsp. Pepper
Salt to taste
3/4lbs Scallops
1 lb Linguine
2 tbsp. Chopped fresh basil or parsley

Directions:

Heat oil in large. deep non-stick skillet or Dutch oven. Add onion and garlic and cook gently until tender and fragrant, but do not brown.

Add tomatoes, breaking them up with a spoon. Add pickled peppers, sweet red peppers, pepper and salt. Cook for 10 minutes, or until sauce is quite thick and any liquid has evaporated. Puree sauce if desired.

Add scallops to sauce and cook for 3 minutes. Remove from heat and reserve. Reheat when pasta is cooked

Meanwhile, bring large pot of water to boil. Add linguine and cook until tender but firm. Drain well and toss with sauce and basil. Taste and adjust seasoning if necessary
