1 c dried apricot halves
1 1/2 c water
1/4 c sugar
2 beaten eggs
2 c buttermilk
3/4 c sugar
dash of salt

Directions:
Directions:
Simmer apricot in water with sugar for about 25 minutes. Blend together eggs, buttermilk, sugar, and salt. Spread apricot mixture in bottom of unbaked pie shell. Slowly pour buttermilk filling over apricots. Bake at 400ºF till knife inserted comes out clean. About 40 to 45 minutes.
