3/4 c butter, soft
3/4 c sugar
1 egg
4 tsp milk
1 tsp vanilla
1/2 tsp grated lemon rind (optional)
1 3/4 c sigted all-purpose flour
1 tsp baking powder
1/2 tsp salt
1 c oats (quick or old-fashion, uncooked)

Directions:
Directions:
Beat butter until creamy; beat in sugar gradually, add egg; beat until light and fluffy. Blend in milk, vanilla and lemon rind. Sift together flour, baking powder and salt. Add to creamed mixture; mix well. Stir in oats. Chill dough at least 2 hours. (Dough can be chilled overnight) Roll dough out on lightly floured board or canvas to 1/8 inch thickness. Cut out with floured cookie cutter. Place on greased cookie sheets. Sprinkle cookie with sugar. Bake in preheated oven at 350ºF 3 to 10 minutes.
