3 large ripe bananas
1 cup sugar
1 egg
4 tablespoons melted and cooled butter
1 1/2 cups all purpose flour
1 tsp salt
1 tsp baking soda

Directions:
Directions:
Preheat oven to 325º. Lightly grease a 9 by 5 inch loaf pan; set aside.
In a bowl, mash bananas; you should have 1 cup. Beat in sugar, then egg and butter. In another bowl, stir together flour, salt and baking soda; add to banana mixture and stir just until all flour is moistened. Pour batter into prepared pan.
Bake for 55 to 60 minutes. Makes 1 loaf

I have also made with less sugar (3/4 cup) and it turns out fine. I have also used half whole wheat and half all purpose flour.
