1 Box Pasta (Spaghetti or Penne), uncooked
1 Can (15 oz) Diced Tomatoes with Liquid
1 Large Onion, cut in thin strips
4 tsp Minced Garlic
2 tsp Oregano
2 tsp Basil - OR 2 sprigs fresh basil, chopped
2 TBsp Olive Oil
4 1/2 Cups Chicken or Vegetable Broth
1/2 Cup Grated Parmesan Cheese
Parsley to garnish

Directions:

1. In large pot, place Pasta, Tomatoes with liquid, Onion, Garlic, & Basil.
2. Add in Broth, Oregano, and drizzle with Oil
3. Cover pot and bring to a boil, reduce to simmer, keep covered. Cook for 10 minutes, stirring occasionally.
Cook until almost all liquid is gone, with about 1" left in bottom of pot
4. Season with Salt & Pepper and Parmesan Cheese. Stir to distribute liquid from bottom.
5. Pour into serving bowl, liquid and all. Garnish with Parsley & Parmesan Cheese.
