2 cups milk
1 egg yolk (slightly beaten)
1/16 tsp. salt
4 tbsp. sugar, divided
2 1/2 tbsp. minute tapioca
1 egg white
3/4 tsp. vanilla

Directions:
Directions:
Blend milk, 2 tbsp. sugar, egg yolk, tapioca, and salt, and cook over direct heat until thickened (approximately 10 minutes). Beat egg white until foamy. Gradually add remaining sugar, beating to soft peak stage. Add to custard slowly, stirring gently to blend. Add vanilla. Garnish with maraschino cherries.
