1 whole chicken (about 31/2 lbs) cut into parts
1 lg onion,chopped
4 stalks celery, chopped
3 carrots, peeled&chopped
4 4 1/2 oz cans or equivalent fresh
2 quarts water
1 lb ground beef
1/2 cup breadcrumbs
1 egg
1/2 tea salt
1/4 tea ground black pepper
1 Tbs chopped parsley (fresh)
1large onion ,diced
4 stalks celery, chopped
3 carrots, peeled & sliced
1 bunch escrole ,cleaned & chopped
Salt & pepper to taste
1/4 lb small pasta (such as acini de pepe or ditalini)

1. Place first 6 ingredients in a large pot. Bring to a boil, then immediately reduce to a simmer and cook until the chicken easily falls off the bones. Remove chicken from the broth and allow to cool. Reserve the broth. When the chicken has cooled enough to handle, remove all the meat from the bones and chop the meat into small pieces.
