1 C. White Sugar
1/2 C. All Purpose Flour
1/4 tsp. Salt
3 C. Milk
4 Egg Yolks
3 T. Butter
1-1/2 tsp. Vanilla
1 C. Coconut
9” Deep Dish Pie Shell

Meringue:

4-6 Egg Whites (room temp)
3/4 C. Sugar
Pinch of Cream of Tartar

Directions:
Directions:
Preheat oven to 350°.
Mix egg yolks, sugar andsalt together. Heat milk on medium heat, stirring constantly. Once milk is heated to a boil, add egg yolks, sugar & salt. Slowly stir in flour. Stir until thickens, then add vanilla, butter and coconut. Keep stirring to ensure it is thick enough ( pudding thickness).

Meringue: Mix well on high in glass bowl until white and fluffy

Brush pie shell with egg whites and heat according to instructions.

Sprinkle coconut on meringue, put on pie and bake until meringue is browned
