1 cup sugar
2 tablespoons shortening
1 egg - lightly beaten
3/4 cup milk
3/4 cup orange juice
4 teaspoons grated orange rind
3 cups flour
3 1/2 teaspoons baking powder
1 teaspoon salt
3/4 cup finely chopped walnuts
6 ounces dried apricots that have been plumped in 1/2 cup boiling water

Directions:
Directions:
Blend sugar, shortening, and egg. Stir in milk, orange juice, and orange rind.
Sift dry ingredients and stir in nuts. Mix well. Add to the liquid mixture.
Drain and coarsely chop apricots. Blend into batter and pour into a small, greased 7" loaf pan.
Let stand for 20 minutes.
Bake 70 minutes until toothpick inserted in center comes out clean.
Cool in pan for 10 minutes on rack.
Remove from pan and cool completely.
Wrap in foil and let stand in refrigerator for two days to allow flavors to blend.
