8 cups flour
1 to 2 1/2 tsp salt

Directions:
In a small bowl dissolve yeast in 1/2 cup luke warm water. Add 1 tbsp. sugar. Set aside. Put remaining liquid in a large bowl. Add salt, shortening, and the remaining sugar. Stir to dissolve salt and sugar. Blend in 2 1.2 cups flour and mix well. Add more flour if needed so dough doesn't stick to your hands. Kneed the dough for a few times and set aside in a warm place to rise for 1 1/2 hours. Punch dough down and let rise again for 45 minutes. Pinch off pieces for frying. Put a little oil on your fingers and flatten dough pieces by pulling and stretching. Meanwhile heat the oil for frying. Drop pieces of dough into hot oil and deep fry until golden browns and puffy. Drop into powdered sugar or cinnamon sugar, add fruit as desired.
