4 Boneless/Skinless Chicken Breasts
Salt & Pepper
1/2 Cup All Purpose Flour
4 TBsp Olive Oil
1/2 Cup Vodka
1 Cup Chicken Broth
4 TBsp Lemon Juice
1/4 Cup Chopped or Diced Tomatoes
4 TBsp Half & Half Cream
Chopped Scallions or Parsley for Garnish

Directions:

1. Pound Chicken to 1/2" to 1/4" thick, cut in half lengthwise. Season with Salt & Pepper and dredge in flour

2. Heat Oil in Skillet, Saute Chicken for 3 minutes on each side. Remove Chicken and drain excess fat off

3. Deglaze pan with Vodka, cook until nearly evaporated. Add in Broth & Lemon Juice, return Chicken to pan. Cook for 1 minute on each side. Remove Chicken to serving plate.

6. Stir Tomatoes into sauce in skillet. Add Cream & heat through till thickened

7. Pour sauce over Chicken. Garnish with chopped scallions or parsley to serve.
