1 cup butter, softened
1 cup sugar
1/2 tsp vanilla
2 cups enriched self rising flour, spooned into a cup
Cream cheese topping
sliced almonds (optional)

Cream Cheese Topping:
2 packages (8 oz each) cream cheese, softened
2 eggs
1/2 tsp vanilla or almond extract
1/2 cup confectioners' sugar
1 cup sour cream or plain yogurt

Directions:
Directions:
Cream butter and sugar until light and fluffy. Stir in vanilla. Gradually add flour and mix well. Pat or spread dough evenly over bottom of ungreased 15 1/2 x 10 1/2" jelly roll pan. Bake in preheated oven at 350 degrees for 20 minutes or until lightly browed. Let cool. Spread crust with cream cheese topping. If desired, sprinkle top with almonds. Continue to bake in preheated 350 oven for 30 to 35 minutes. Cool completely before cutting into bars. Makes about 3 dozen cookies.

Cream Cheese Topping:
Beat cream cheese until smooth. Add eggs and extract beating until smooth. Stir in sugar. Fold in sour cream.
