1 lb Ground Sausage, Beef or Turkey or any combo of
1 med Onion, chopped fine
1 Can (14.5oz) Diced Tomatoes, drained
2 Cups Tomato Sauce (Ragu)
2 tsp Italian Seasoning
6 Lasagna Noodles, cooked & drained
1 Egg, slightly beaten
15 oz. Ricotta Cheese
1/3 Cup Grated Parmesan Cheese
5 oz Frozen Spinach, thawed & drained
8 oz. Shredded Mozzarella Cheese

Preheat Oven to 375º

1. Cook Onions & Meat until brown, drain fat from skillet. Add Tomato Sauce & Italian Seasoning to meat, bring to a boil. Reduce heat, Simmer uncovered until thickened, 15 to 20 minutes.

2. In bowl, mix together Ricotta, Egg, 1/4 Cup Parmesan. Fold in Spinach.

3. In greased 9 x 13 baking dish, layer 3 noodles in bottom, spread 1/2 of Ricotta mix over noodles, add 1/2 meat mixture, then sprinkle with 1/2 Mozzarella. Repeat layers.

4. Bake Uncovered for 30 minutes. Let stand 10 minutes before serving.
